He first schooled in Collegiate school in his younger years, then moved on to the Institute of Culinary Education. At the Institute, he was trained in the classic arts of becoming a chef.

His exact earnings are not publicly displayed but take a look at his career journey so far. Carl started his career journey working as a sous chef at a restaurant named Dish in Clifton, New Jersey.

He then went on to become an executive chef at Sabor in North Bergen, New Jersey. After that, the new owner of Stephen’s Cafe of North Bergen hired him as a consultant chef for the relaunch. This was back in July 2002.

Ruiz’s talent quickly became high in demand as he soon after got another offer as an executive chef. He worked on West 27th Street, Manhattan, at Son Cubano.

Succeeding that, he decided to move to New York City at the tail end of 2010.

It was 2011, and Carl got an offer to be the executive chef at Brick Oven in Morristown, New Jersey. He worked there up until 2013. Still in 2011, on the 10th of October to be exact. Ruiz and his then-wife, Marie Riccio, established a café together.

This, in turn, boosted the popularity of both Carl and the restaurant. Carl was eventually hired as a judge on “Guy’s Grocery Games” and “Guy’s Ranch Kitchen,” both of which were hosted by Fieri.

He actually won the most money as a competitor on the “Guy’s Grocery Games” show. Ruiz and Riccio later divorced, with Riccio keeping Marie’s Italian Specialties after the divorce.

Carl then moved on and, in June 2019, established a new restaurant called La Cubana. It focuses on authentic Cuban cooking in New York City’s Meatpacking District.
